32 Cloves of Garlic Chicken with Potatoes

Both Nigel Slater and Dr. Mary Dan Eades (two of my favourite chefs) have published recipes for “Chicken with Forty Cloves of Garlic” in Real Food and The 6-Week Cure respectively. I’ve been wanting to try the combination for quite some time, and not only had plenty of garlic last week, but also plenty of organic potatoes our Bavarian friends grew and we hand-picked, which were just begging for garlic gravy integration. Below I provide you with my variation on this classic dish.

Yes, forty cloves is a HECK of a lot of garlic to peel… but I wouldn’t actually know, I used 32 HUGE cloves & truthfully didn’t have the guts to continue. I used two of those purple-flecked softball-sized bulbs they sell individually in bins at the commissary. After tasting the sticky-sweet result, I understand why more cloves could easily be used; the taste was so mild that even if you aren’t a huge garlic-fan, you will most definitely be a fan of this recipe. THIS is a comfort meal and perfect for these cold fall nights.

32 Cloves of Garlic Chicken with Potatoes – please feel free to grab more than a pair (of bulbs…ha ha) and go for 40 Cloves

Preheat oven to 375

Put large pot of lightly-salted water on to boil
Clean and quarter (if necessary) organic potatoes to get them equal-sized. Mine were small, barely larger than square-inch-size, and I used about 12. Add to the pot once it boils. After 7 minutes or so of hearty boiling, drain the water out and shake the potatoes roughly in the pan until you see them slightly breaking up.

Take 2 Packages Kosher Chicken Thighs (skin on) – can be bought frozen from Ramstein Commissary, and I’ve also seen them at many German grocery stores.
Cover Thighs (the chickens’ thighs) with salt, pepper & Süß Paprika (buy German)
At high heat, I browned the thighs in 1-2tbsp organic (bio) butter, it took about four minutes each side.

I distributed about 1/2-1tbsp of butter around the bottom of a large casserole dish, added about 100ml of chicken broth (try to find broth cubes without wheat or sugar ingredients or make your own – shown below), then added browned chicken thighs, partially cooked potatoes, 4 branches of garden grown thyme, and 32 peeled whole garlic cloves. Covered casserole dish with aluminium foil and baked in oven for 1 1/2 hours.
